Two-Dollar Power Breakfast



My favorite power breakfast consists of bread, peanut butter and bananas. I like to use an all-natural peanut butter, whatever bread is lying around, like this ciabatta, and a nice, ripe banana. If all you have is green bananas, eat cereal. Especially if you have never had a peanut butter and banana sandwich before. Ugh. Green bananas are not sweet enough to play with the saltiness of the peanut butter. If you want to know just how grassy green bananas taste, make this sandwich with green bananas.


For a weeknight desert or a Saturday morning sweet treat, substitute the peanut butter with Nutella. It is a chocolate and hazelnut spread that is semi-healthy. If you really want the power to last you all morning, use a multigrain or sprouted grain bread. Low-sodium sprouted grain breads taste like wet sawdust. Get the regular kind. The sugar from the bananas and the peanut butter kick in right away and the protein from the whole grain and fruit, powers you through the whole morning. I am a big guy and I never get the 10-o-clock grumbles if I have one of these babies for breakfast.

$2.00 or less. 450-550 calories. Good protein. Good fats. Sustained energy. Loaded with vitamins. Good fiber.
